Version 25.10 accidentally removed from test matrix

The PR titled "Add 26.1 to test matrix" also removes version "25.10" from the ClickHouse regression test matrix, but this removal isn't mentioned in the PR title or description. This appears to be an accidental deletion that reduces test coverage for ClickHouse 25.10 users.
