Bug on the server still hasn't been fixed and this is causing the head/latest test runs to fail atm.

Adjusts the ClickHouse server-version gate for a Variant parameter binding test so it only runs on server versions where the behavior is expected to be fixed, reducing failures in CI against “latest/head” servers.
