Allow mcp/clickhouse to bind to 0.0.0.0 instead of 127.0.0.1

Right now the FastMCP is binding to 127.0.0.1, instead of 0.0.0.0, which makes it impossible to use with Docker.

We just need to accept an additional env variable like this
