Nice discovery! I confirm that the test data in the test tests/unit/ssg-module/test_build_yaml.py in tests/unit/ssg-module/data/ospp.xml contain <title> and <description> element with override attributes both set to true, which ensures that the method Profile.to_xml_element() will contain these attributes.

Removes the override-true-all-profile-* tests from the project.
Rationale:
Fixes #11051
During the review #11075 it was discussed that we cover this in the Profile unit tests.
I believe that this is now covered by
test_profile_to_xml_elementintests/unit/ssg-module/test_build_yaml.py.
