This is a
deployworkaround for outdatedConduitandConduit-UItags in latest majors.Basically, we're picking our compose files and default env files from the main repo, but often release new versions without updating the compose env defaults, meaning these could still point to older minor releases.
This PR makes it so that we always use the selected minor
Conduitversion and latestConduit-UIminor version while our selected tag's major matches the latest one available.
