Document the new real-time plotting feature for visualization tools

A new feature was implemented recently allowing plotym.py, plotu.py, and plotymlag.py to render graphs statically or live/ realtime during the simulation using the realtime=True parameter. However, the tools/README.md currently lacks information about these scripts and does not explain how users can trigger this interactive mode.
