A matrix:

$$ \begin{matrix} 1 & x & x^2 \\ 1 & y & y^2 \\ 1 & z & z^2 \\ \end{matrix} $$

A bmatrix:

$$ \begin{bmatrix} 1 & x & x^2 \\ 1 & y & y^2 \\ 1 & z & z^2 \\ \end{bmatrix} $$

A Bmatrix:

$$ \begin{Bmatrix} 1 & x & x^2 \\ 1 & y & y^2 \\ 1 & z & z^2 \\ \end{Bmatrix} $$

A pmatrix:

$$ \begin{pmatrix} 1 & x & x^2 \\ 1 & y & y^2 \\ 1 & z & z^2 \\ \end{pmatrix} $$

A pmatrix with dots:

$$ \begin{pmatrix} 1 & \cdots & x^2 \\ \vdots & \ddots & y^2 \\ 1 & z & z^2 \\ \end{pmatrix} $$

An Array:
