docs: major README overhaul for v1.8.0

Description

• Lead with protocol trifecta (MCP + A2A + AG-UI) in hero section
• Add prominent 'Protocols & Standards' section with detailed table
• Restructure feature grid: protocols first, then capabilities
• Update architecture diagram with all 16 providers, protocol boxes, observability layer, chat widget, and pgvector RAG
• Expand comparison table: named competitors (Dify, n8n, CrewAI, LangGraph) with per-feature breakdown
• Update FAQ: 16 providers + Ollama with model examples, xAI added
• Update Tech Stack table: hybrid search, observability, chat widget
• Add Protocols to table of contents
