Create schema from the NDJSON files

module-name: Update Documentation and Add Initial Exploration

Problem

Some of the boilerplate repo documentation contained placeholder values that were not populated. Also there was no functional code yet.

Solution

• Update some placeholder values
• Add initial Jupyter Notebook file to facilitate data exploration of the NDJSON files
• Add schema CSV that is the output of the Jupyter Notebook file
