What does this PR do? What is the motivation?

Single step will go GA at re:Invent, but only supporting APM. We've therefore been asked to remove our public docs, to avoid confuse for users (they can still use it, but they shouldn't consider it GA).

Merge instructions

Can be merged once reviews are complete.

- I kept SSI topic as it's hidden and will be restored in the near future.
- removed the redirect as it's not needed
added a space to rerun build

Currently SSI is not compatible with the Ruby profiler, and I just noticed we temporarily removed in #26407 the note we had to call this out, but it's important to add to avoid confusion/disappointing customers.
