What does this PR do? What is the motivation?

Adds a documentation bullet point for OpenAI responses instrumentation for the Node.js tracer DataDog/dd-trace-js#6583

i think for getting a preview available in this repo you need to have the branch name as <your-name>/<feature> in the future, but seeing as this is a two line change i think this is fine, will let the docs team take a look as well!

That is correct! I tested it locally though, and it looks good, so I approved. You won't be able to merge it because the build_preview will fail. Just @ me or ping me on Slack when it's ready to merge, and I can override and merge for us.
