Rename FlowFuse Assistant and related references to FlowFuse Expert

Description

This pull request updates all references in blogs, screenshots, Node-RED documentation, and the FlowFuse handbook from “FlowFuse Assistant” to “FlowFuse Expert,” in line with the discussion in the referenced Slack thread.

@ZJvandeWeg @dimitrieh I’ve just resolved the conflicts. This PR should be merged to reflect our rebranding, as it updates the website to change FlowFuse Assistant to FlowFuse Expert in blogs, screenshots, gif, handbook and node-red docs.
