[FEATURE] Add support for missing ChatMistralAI models

I would like Flowise to support additional missing models for ChatMistralAI. At the moment, only a limited set of models is available, while other officially released or compatible Mistral models are not accessible through the UI or API configuration. Adding support for these models would improve flexibility and coverage for different use cases.

Additional context:
For example, the following models are currently not available (as of this writing):

• codestral-latsest
• devstral-small-2505

These models are part of the official offerings by Mistral and could be integrated to extend functionality. It would also be helpful to provide an option to manually specify custom model names if they are compatible.

You don't need to wait for somebody to update the Mistral model list for using them natively in Flowise. You just need to host your own JSON model list and add or remove models as you see fit.

Thank you @toi500 for the helpful tip! I wasn’t aware of the option to host a custom JSON model list — that’s exactly what I needed to move forward quickly.

That said, I’d still be happy to contribute a proper update to Flowise itself to include the latest Mistral models out of the box, so others can benefit without having to manually configure it. I’ll propose a PR soon to contribute that update.
