Fix example count exaggeration in example/README.md

Problem

example/README.md claims "100+ example configs" but the directory contains approximately 37 YAML example files.

Fix Direction

Count the actual examples accurately and update the claim, or remove the count entirely and replace with a more neutral description. Exaggerated counts erode trust in the documentation.
