I would like a feature where you would be able to generate vouchers withing a organiser that user can use.

Do you mean a promo code that existing on the organizer level, rather than the event level?

I would like to be able to issue organiser-wide vouchers for gift card payments.
Ideally these vouchers could be generated from a purchase flow (perhaps a product?)
