Pydantic Pinned Version

Is there a chance we could remove the pin on the pydantic version? I see it was an issue a year ago with certain platforms. I just tested updating pydantic on windows and didn't have an issue. I am running into some issues with newer libraries requiring a newer version of pydantic. If we run into issues again, I am happy to help troubleshoot them.

We can definitely update the version. Which one would you like the library to update to?

In particular I need pydantic version 2.11 or greater.

I have generally found it is helpful to have the dependency versions pretty loose if possible for generic libraries (actual deployed programs are a different story). If people run into issues that are solved by downgrading, they can pretty easily arbitrarily limit the offending library versions in their own requirements, but that option isn't available when version solving with libraries that require a higher version.

When troubleshooting this issue, I ran into an issue with the current aiohttp-client-cache version failing during tests with aiosqlite v0.18.0 that was ultimately solved by upgrading aiosqlite.

I created an MR where I locked all of the requirements in the primary dependencies to the current major version. I ran pytest on my system and all tests passed with the docker-compose home assistant setup.
