NitroV3 support

With nitrov3 support on the horizon i would love support for that.
A few hooks and types changed but all in all isn't too much different

Yes, I would also like to add support for v3, but I'm still hesitating about creating an entrypoint /v3 and then deprecating it when v3 becomes the default. I'm not sure yet 🤔

Makes sense.
I created a PR as I would really like to be able to use evlog in my nitrov3 projects already 👀
Though if you'd rather want to wait thats understandable as well
