fix: improve gateway display layout, add metrics, and fix log level filtering for Discord integration

Summary

• Add Hop Limit and Gateway Count inline fields above gateway list
• Gateway data overflows to embed description (4096 chars) when exceeding field limit (1024 chars), allowing 4x more gateways to display
• Rename "hop(s)" to "hops" throughout
• Add blank line spacing between hop groups for readability
• Add shortname to admin command autocomplete DB results
• Fix uvicorn access log filter to properly suppress successful GET requests at INFO level
