Overview
Prepares the 879.0.0 release by bumping versions for @metamask/bridge-controller (69.2.0→69.2.1), @metamask/bridge-status-controller (70.0.0→70.0.1), and @metamask/transaction-pay-controller (18.0.0→18.1.0).

Updates downstream dependency ranges (notably @metamask/bridge-controller and @metamask/bridge-status-controller) plus CHANGELOG.md and yarn.lock to reflect the new published versions.
