v0.8.11 - Quality dictation by default

This patch makes the cleaner dictation path the out-of-box experience.

Highlights

• Fresh installs now default dictation transcription to Quality mode.
• The Fast / Quality picker now opens on Quality when no saved preference exists.
• Existing users who explicitly selected Fast keep that saved choice.
