Add architecture documentation for bounded contexts

Description

This adds documentation for our proposed model of bounded contexts mapping on to AWS accounts

Context

This adds new documentation to help developers unfamiliar with the project understand how we aim to structure the architecture.

Type of changes

• Refactoring (non-breaking change)
• New feature (non-breaking change which adds functionality)
• Breaking change (fix or feature that would change existing functionality)
• Bug fix (non-breaking change which fixes an issue)
