I just checked the past ones and there was an announcement in March. Seemed like a safe forward looking statement.

I'd rather not set timeline expectations without anybody responsible for fulfilling them

Sure. How about:
NixCon 2026 is likely to happen but no team has yet been assembled to make that a reality. Contact the steering committee if you'd like to help!
Replace the 2025 details with a advertisement for volunteers.

We'll no doubt reuse much of the details that are deleted in this PR for the next NixCon, but they're no longer relevant until then.
