Update README challenge totals and links for current challenge set (0–64)

The README still reflected an older challenge count/range and omitted links for the newest challenges. This updates challenge metadata in the docs to match the current catalog (65 total: challenge-0 through challenge-64).

• Challenge totals and ranges

  • Updated overall challenge count references from 62 to 65.
  • Updated availability ranges across setup sections to use 0-64 where applicable (Docker/K8s/Vault/Cloud and path selector table).

• Challenge link coverage

  • Added missing Docker exercise links for:
    • challenge-63
    • challenge-64

• Consistency updates

  • Updated the CRE metadata comment string to reflect 65 challenges.
