Audit Info for Extracts

Idea came initially from working on other audit fields for process. Would be nice to have options for extracts as well. This one can be big though because we're starting to approach data profiling territory.

Going to scope this down to just keeping track of high/low dates and record counts, like with the process audit fields. Will revisit if other data comes up for tracking on either process or extract.

Had an idea to also have the ability to track audit data when the extract is written as well as read/loaded.
