Shuould we add a desktop tag (or whatever we use) since there is the new desktop application?

Rewrites the Amethyst project page to match the new structure. The old description read like ad copy and was outdated. The new version covers what Amethyst is, why OpenSats funds it, and what the team is working on, with links to grant announcements and the impact report.
