Allows passwords to be awesome

Issue Resolved

Fixes #379

  • Explicitly sets the password updates, fixes the fact we use encrypted_password which was preventing the password from actually updating.
  • Changes routes so they are aligned /api/v1
  • Adds password update so that FE can allow users to change it.
