This PR implements the flexibility of using ActiNet to produce Walmsley2020 (sleep, sedentary, light, MVPA) or Willetts (sleep, sit-stand, vehicle, mixed, walking, bicycling) labels.

Some restructuring of the repo has been implemented to accomodate this.

Also updates to the documentation

Yeah, was previously using these to train hmm transitions from sleep to sedentary.
This only works for the Walmsley labels.
We need to find a more flexible approach in future implementations for Willetts, Doherty and other models.
