build: Upgrade dependencies

This might fix the greenlet problem

It looks like dependabot upgrades dependencies pyproject.toml, but isn't proactive about those in poetry.lock. So running poetry update bumps all the dependencies in the lock file, including greenlet, and so should hopefully fix the 3.12 error at #270
