The AMIs we're currently using for our node groups will soon be unsupported, so this commit updates them to the new standard version, along with updating the EKS module itself to enable that.

Thanks @liam-lloyd ! Makes sense to include the same addons here as in the new stela cluster. I checked and a newly uploaded file was correctly assigned thumbnail256 and thumbnail256cloudpath values.
