Seerr migration, plex cleanup, domain rename

Jellyseerr → Seerr: Migrated from fallenbagel/jellyseerr:2.7 to ghcr.io/seerr-team/seerr:v3.0.1 (the official rebrand). Runs as non-root (UID 1000), requires init: true
jellyseerr.lan → seerr.lan: Primary domain renamed with permanent 301 redirects from old URLs — existing bookmarks keep working
FlareSolverr healthcheck: Reduced start_period from 2m to 60s

Plex compose file: docker-compose.plex-arr-stack.yml deleted — never tested on real hardware. Plex users: see "Prefer Plex?" in SETUP.md for what to change
Compose drift check: Removed from pre-commit (compared Jellyfin/Plex files)
WireGuard monitor: Removed from pre-commit expected monitors (service was removed in v1.5.7)

SETUP.md refactored: Slimmed from 1,271 → 571 lines by extracting optional sections into dedicated guides
New: App Configuration Guide — Step 4 app setup (Jellyfin, Sonarr, Radarr, etc.)
New: Local DNS Guide — Pi-hole + Traefik .lan domain setup
New: Remote Access Guide — Cloudflare Tunnel setup
New: Utilities Guide — Uptime Kuma, Beszel, duc, qbit-scheduler
All docs updated for Seerr rebrand
Pi-hole: clarified docker restart pihole needed for bind-mount DNS changes (not reloaddns)
Uptime Kuma: added monitor setup guide with SQLite examples
CONTRIBUTING.md: updated scripts structure and pre-commit hooks table

New pre-commit check: check-doc-links.sh — blocks commits with broken internal markdown links (file references and anchor links)
Fixed 4 broken cross-doc links (REFERENCE.md, UPGRADING.md)
