I think Pixi is more appropriate than uv for this project since toksearch needs to be installed via Conda. This PR prepares the project for installation via Pixi, and re-organizes the repository in ./src/ and ./scripts/ sub-folders.

Let's use Pixi moving forward. I will write a proper README, but in the meantime you can start a shell using pixi shell or run the demo from within the Pixi environment using pixi run python scripts/run_demo.py.
