Nightly builds failing for a few months

What happened:

Dear authors and/or contributors (cc'ing @jukent @anissa111 and @kafitzgerald), the nightly builds of this cookbook have been failing for the last few months.

Could you please have a look at it?

Latest nightly build as of the creation of this issue.

Anything else we need to know?:

If you think it is due to Pythia infrastructure or something else other than the cookbook itself, please let us know.

Thanks for the note. These aren't something I get notifications for.

It looks like there's an error coming from an xarray resampling operation (so likely not Pythia infra):

From the last nightly logs that passed on July 29 to the first nightly logs that failed on July 30, this is what changed.

old.txt -> new.txt

From the breaking changes section of xarray's 2024.07.0 release notes, it seems like the loffset removal might be what we need to address here.
