docs: rename references to Bot_Pimetheus

Description

Update repository/project name and URLs from XBot_Pimetheus to Bot_Pimetheus across docs and metadata. Changes include README (clone URL and directory name), docs/CONTRIBUTING.md (project name and issue/new-issue links), docs/SECURITY.md (project naming and supported version text), and pyproject.toml (Homepage, Repository, Documentation, and Issues URLs). This aligns docs and package metadata with the repository rebranding.
