These config files are stale and causing make reproducible-prestate to fail like below:

./bin/op-program configs check-custom-chains
t=2025-07-25T15:43:10+0800 lvl=crit msg="Application failed" err="errors checking custom chains: failed to decode rollup config: json: unknown field \"l2_blob_config\""

This pr removes them from the op-es branch, but they still exist on the beta_testnet branch if needed.

Fixes QuarkChain/pm#65.
