fix(license): add missing copyright holder#11

The MIT License requires a copyright holder. The header read
'Copyright (c) 2026' with no name — technically still a license
grant but ambiguous about who the licensor is. Match the kalshi-cpp
LICENSE style ('Copyright (c) 2026 Kevin Martinez Lopez') for
consistency across sibling SDKs.
No effect on existing consumers; the license text and grant are
unchanged.
