[Feature] Support for Avalonia v12.0

Avalonia v12.0 has been officially released.

To ensure compatibility for modern .NET projects, could we please update ScottPlot.Avalonia to support the v12.0 SDK?

#5228 Someone taught me how to fix the blank issue, but I'm unable to modify SkiaSharp, SkiaSharp.HarfBuzz, and SkiaSharp.NativeAssets.Linux.NoDependencies in Scottplot. If you manage to do it, please let me know.

It seems to work fine on Windows, but on macOS, it still throws: "Unhandled exception. System.TypeLoadException: Could not load type 'Avalonia.Platform.OptionalFeatureProviderExtensions' from assembly 'Avalonia.Base, Version=12.0.1.0, Culture=neutral, PublicKeyToken=c8d484a7012f9a8b'."

avalonia v12 has some break change. so you can't use ScottPlot.Avalonia. you chang your csproj as this:

Hi team, Avalonia 12.0 is out and it's a major upgrade for cross-platform developers (especially for Linux users). Currently, using ScottPlot.Avalonia on Avalonia 12 leads to severe hard crashes (SIGSEGV/TypeLoadException) during interactions due to breaking changes in focus events and SkiaSharp version mismatches. Looking forward to an official release supporting Avalonia 12. Thanks for this great library!
