fix: propagate vite auth env vars

Summary

• remove the outdated helper text from the Auth settings dialog now that Clerk is the default
• add build args + ENV wiring in the frontend Docker stage so Vite sees auth settings at build time
• pass the build args from docker-compose so prod builds embed the correct provider + publishable key
