previously, I had manually bumped the version to use the old npm publish flow.
however, we should use changesets instead, which will bump it on it's own.
So since 2.0.0 is our latest released version, I'm undoing the manual update I did, so that the automatic publish workflow PR will go from 2.0.0->2.0.1
