Changes in otel-collector config does not activate on `helm upgrade`

Steps to reproduce:

1. Remove a processor from the config
2. Apply helm upgrade ... command
3. Run kubectl -n platform get cm my-release-signoz-otel-collector -o yaml to find the changes did not apply

This is working with the latest versions.
