Deliberately not a mirror of the menu: it explains what you would otherwise learn by trial and error — why batches carry their own dates, that booking out always follows FEFO across locations, that the delivery counter books on + but only counts on −, why locations are retired instead of deleted, and that the basket is filled but never ordered.
