This streamlines the flow where if you don't have a default org set, the CLI will interactively ask you to select one.
After selecting the org it will ask you if you want to store this setting as the default org.
If you say yes it will update the config with that org as the default org.
You can opt not to do so. You can even opt to not be asked this particular question again.
