Fix unsubscribe update config

fixes #115

Main changes:

• refactor configuration using Pydantic class to validate and save configuration
• update test accordingly
• fixes unsubscribe not correctly detected
• configs (replica in analysis folder and the input one) are appended with the detected opt-out repository
• configuration has now a version field set 1.0.0
• the configuration in analysis folder is saved with all values explicitly (even when using default values, to make the output more robust)
