Redact sensitive request headers in webhook event logs

[Copilot]

WebhookRequestLogSubscriber was storing all request headers verbatim, exposing secrets such as Authorization tokens, cookies, and webhook signature headers to anyone with database or log access.

Changes

• Header redaction: Values of known-sensitive headers are replaced with [REDACTED] before persisting; header names are retained for debuggability
• SENSITIVE_HEADERS constant: Defines the redacted set — authorization, cookie, set-cookie, x-api-key, x-auth-token, x-hub-signature, x-hub-signature-256
• REDACTED_VALUE constant: Centralises the placeholder string
