contracts: extend workstation examples for Mac-on-Linux polish signals

Resolution:

• Added optional macOnLinuxPolish metadata to schemas/DesktopProfile.json.
• Updated examples/desktopprofile.json with active, validation-backed, proposed, and non-goal workstation polish signals.
• Updated examples/README.md to clarify that implementation authority remains in SociOS-Linux/source-os and that this does not claim full macOS parity.

Validation evidence is recorded in PR #82.
