docs(mintlify): fix logo wordmark from StacyOS to StacyVM#9

PR #8 was merged before the correction commit landed, so main shipped the parent-org "StacyOS" wordmark instead of the project-specific "StacyVM" wordmark for both light and dark logo slots. - assets/stacy-logo-light.png: black "StacyVM" wordmark (from Logo 2.1 white theme.png) - assets/stacy-logo-dark.png: white "StacyVM" wordmark (from Logo 2.2 dark theme.png) Favicon is unchanged from PR #8 — it was already correct. #8 was merged before my fix-up commit landed (the original PR used
Logo 1.1/1.2.pngfrom the user's Downloads, which carried the StacyOS wordmark; the user then providedLogo 2.1 white theme.png/Logo 2.2 dark theme.pngwith the project-specific StacyVM wordmark). Net result:mainis currently rendering the wrong wordmark on the Mintlify docs site.What this PR does
