Refactor test data to use static GUIDs and constants

Update StubTestData to define static GUIDs and string constants for merchants, operators, contracts, products, and transaction types/statuses. Refactor all test and mock data to use these constants for improved consistency and maintainability. Remove unused code and apply minor code style improvements. No changes to business logic or application functionality.
