Keep theme consistent across Mintlify config sources
This commit introduces a second config source with "theme": "palm" while the existing mint.json still uses "theme": "venus", so docs rendering now depends on which config file a given Mintlify version or workflow reads. In environments that prioritize docs.json, this silently changes site styling and increases config drift risk for future edits; align the theme (or keep a single canonical config) to prevent inconsistent output.
