Update to React 19 and Next 16

We're currently using React 18. #11 is a failed @dependabot attempt to simply update the dependencies. But it needs some work to update.

Definition of done

• We depend on react, @types/react and react-dom at version 19.
• We depend on next at version 16.
• Code compiles and dashboard is unchanged.
