fix: prefer XTX over XT in GPU model selection, add RAM privilege hint

  • Rewrite GPU variant selection: check suffix-only variants first
    (not the full-name first variant), prefer XTX > XT
  • Fixes 7900 XTX showing as 7900 XT for Navi 31 cards
  • Add missing English label mappings: Rank -> Reihe (MEM section)
  • Guard Size -> Größe mapping with section == MEM check
  • Add README hint about running cpu-x as root/polkit for RAM data
