Standalone config reference descriptions

• Most critically: We need to add types. For example I tried to look up how routes should look, and it just says binds[].listeners[].routes[].backends[].[policies.ai](http://policies.ai/).routes with no description, list of fields, or a type to reference.
• Fill out the descriptions. Some fields have a description, but ideally all fields would have a description
